Made with Feta Cheese and Greek yoghurt, it makes for a fantastic salad lunch. And also as you recognize feta is one of the healthiest types of cheese.

Recipe
Active ingredients:
– 1 Kg cauliflower

For the marinate:

– 1 1/2 tablespoon. ghee

– 1 tsp dried anardana (dried pomegranate) powder

– 1/2 tsp. sumac powder or cayenne pepper

– 1/2 tsp. dhaniya (dried out coriander) powder

– 1/2 tsp. jeera (cumin) powder

– 1/2 tsp. red chilli flakes

– 1/2 tsp sea salt

– 1 tsp. fresh mint leaves, cut

– 1 tsp. parsley, chopped

For moong salad:

– 1 tsp olive oil

– 1/2 onion finely chopped

– 1/2 tsp. dhaniya (dried coriander) powder

– 1/2 tsp. jeera (cumin) powder

– 1/2 tsp. anardana (dried out pomegranate) powder

– 1/2 cup baked pinenuts

– 100g grew moong steamed

– 1 cup cherry tomatoes sliced in 2

– Sea salt according to taste

– Black pepper according to preference

– 1 tbsp. fresh coriander leaves, chopped

– 1 tbsp. fresh mint leaves, sliced

For feta cheese dip

– 3/4 mug greek yogurt

– 50g feta cheese

– 1 tablespoon. lemon juice

– Sea salt according to taste

– 1/2 tsp chili pepper

– 1 tsp. coriander leaves, cut

– 1 tsp. mint leaves, sliced

Directions:

– Blanch or vapor cauliflower for 12 to 15 minutes and also keep apart.

– Now for the sauce, in a large bowl, include ghee, dried out anardana sumac, powder or cayenne pepper powder, dhaniya powder, jeera powder, chilli flakes, sea salt, mint leaves, parsley as well as blend well.

– Then, take the cauliflower and also comb the marinate all over the cauliflower well.

– Now, pre-heat the stove at 180 degree and also then roast the cauliflower for 10-12 mins.

– For moong salad, put a frying pan over tool fire, include olive oil, onion, dhaniya powder, jeera powder, anardana powder and mix.

– Add the roasted pinenuts, moong, cherry tomatoes, mix well as well as turn off the gas.

– Now, add sea salt, black pepper, fresh coriander leaves, fresh mint leaves and also mix.

– Then, move the salad blend into the serving dish.

– For the feta cheese dip, in a huge dish, include greek yogurt, feta cheese, lemon juice, sea salt, chili pepper, coriander leaves as well as blend well.

– Now transfer the dip to the serving bowl.

– Take a little bit of feta cheese and garnish over the salad.

– Take out the roasted cauliflower from the oven and also place it over the salad.

– Garnish the cauliflower with cheese dip and coriander leaves as well as serve hot.
